CONTEMPORARY HAE MEE TNG PASTA

This classic hawker dish is updated and served with pasta.

Ingredients & Method

  • Hae Mee Tng Pasta Ingredients
  • 1 kg of whole prawns with shells and heads on
  • 1 large carrot, peeled and cut into large chunks
  • 10 shallots
  • 50g gula melaka
  • 60g dried prawns
  • 60g dried oysters
  • 60g dried ikan billis
  • 3 tablespoons fish sauce
  • 1 tablespoon coriander seeds
  • 1 tablespoon white peppercorns
  • 3 star anise
  • 5 cloves
  • 1 cinnamon stick
  • 3 litres water
  • 3 cubes knorr chicken stock
  • In a large pot, place all the ingredients and bring to a boil
  • Let it simmer for 1 hour
  • Add the fresh prawns to the pot and cover it with a lid and turn off the heat
  • Let it steep for 15 minutes
